Try out the newly launched Signature menu at Sofitel So Singapore, created by Xperience Restaurant’s resident culinary designer, Trevor Paulo. One of Singapore’s youngest hotel executive chefs — he’s only in his late twenties — Paulo has combined his passion for French cuisine with local inspiration to create dishes that complement the seasons. Highlights from the menu include lamb confit served with ginger carrot puree, Kenya beans and vadouvan jus. Opt for the Xperience Celebrations to watch Paulo create a customised dessert before your eyes.

The 12-year-old New York cocktail bar and restaurant chose Singapore as its second location, and they open this week in Singapore’s Chinatown. The 2011 “Best Bar in the World” winner has brought in its art deco-inspired aesthetic, Prohibition–era vibe and classic tipples, including EO’s Manhattan (rye whiskey and Italian vermouth with orange curaçao and Angostura Bitters) and EO Gimlet (Perry’s Tot Navy Strength Gin with EO lime cordial), prepared by principal bartender Steve Schneider. Dine until 2am (drink until 3am on Fridays and Saturdays), and hang around until closing time to receive the legendary cup of chicken soup, the speakeasy’s gentle way of hinting that you need to go home.

Sullivan + Strumpf

The 11-year-old Australian contemporary art gallery, headed by directors and owners Ursula Sullivan and Joanna Strumpf, has opened its space at Gillman Barracks, its first in Asia. ARRIVAL, the inaugural exhibition, features artists including Sydney Ball, Hiromi Tango and Tony Albert. Sam Leach, who won the Archibald and Wynne prizes, will hold a solo show next, and debut exhibitions  by Joanna Lamb, Alex Seton and Sam Jinks will take place later this year.
