ONE-NINETY BAR BY JAVIER DE LAS MUELAS
Old-world glam meets contemporary style at Four Seasons Hotel Singapore’s latest F&B addition. The warmly lit, mirror-panelled space underwent a drastic revamp back in January and owes its impressive drink menu to renowned Spanish mixologist Javier de las Muelas (read his story here) — who, in addition to sharing his expertise with One-Ninety’s bartenders, has also brought his signature droplets to the bar’s mixes.

Make no mistake: This four-month-old bar is a predominantly a study of Parisian elegance. Yet the exotic oriental touches in its eclectic decor and menu give the space a fusion feel. This cross-cultural theme extends to the drinks menu, which runs the gamut from its signature The French 69 (a refreshing mix of gin, Labruyère champagne and lemon juice, and a cheeky reference to its address) to the Asian Sensation Kettle, a contemporary and highly intoxicating interpretation of the classic chrysanthemum tea.

One shouldn’t be surprised if Gatsby himself shows up in the main salon of Regent Singapore’s new bar. The grand space, which opened in April, is a throwback to the decadent Golden Age of fine drinking. Just as impressive is the seasonally rotating cocktail menu, which features drinks inspired by Manhattan’s distinctive districts, ranging from the flavourful Spanish Harlem to Wall Street.
