A preview of Janice Wong's Margaret River appearance

Singaporean dessert chef will head to Australian food and wine festival in November.

Celebrated Singaporean dessert chef Janice Wong gave a showcase of some of the creations she will bring to Western Australia when she heads over to take part in the Margaret River Gourmet Escape presented by Audi in November.

At the 3-month-old Janice Wong Singapore restaurant at the National Museum, Wong served up her classic Lemon Explosion (lemon liquid and popping candy in a white chocolate shell), Chocolate H2O (burnt caramel bavarois with yuzu sorbet and chocolate soil) and her interpretation of breakfast in Singapore: pandan kaya ice cream and cake with coconut textures.

To complete the Margaret River Gourmet Escape preview experience, Dany Angove, head chef at the Leeuwin Estate winery and restaurant, prepared canapés with local ingredients he brought with him on the flight in, including abalone from Flinders Bay.

The fifth edition of the annual food and wine festival will take place November 18–20 in Western Australia’s Margaret River wine region, 270km south of Perth, bringing together food producers, winemakers, gourmet connoisseurs and more than 40 Australian and international chefs, including Nigella Lawson, Ashley Palmer-Watts, Rick Stein, and David Thompson of Long Chim at Marina Bay Sands.
