1. THE WOW – WORLD OF WHISKY AT LE MÉRIDIEN SINGAPORE, SENTOSA

Sited next to Imbiah station and housed within the colonial environs of the Le Méridien Singapore, the World of Whisky (WoW) offers a blend of  elegant history with contemporary sophistication. Situated in the heart of Sentosa, right next to the iconic Merlion, Le Méridien  (previously the Mövenpick Heritage Hotel Singapore) oozes old-world charm with its glamorous architecture. The interior al fresco space comes with crafted wood furnishings, and chandeliers that cast an ambient glow on the Y-shaped Indonesian teak bar table, while the patio offers a view of the Merlion. A Whisky Library at the lounge offers one of Singapore’s most extensive collections of fine and rare premium whiskies. Guests can enjoy exclusive menus of meticulously crafted food and whisky pairings in The Malt, a private dining room within the lounge. 2. GREENWOOD FISH MARKET

With a “Sea to Table” philosophy, Greenwood Fish Market directly imports seafood from Canada, New Zealand, South Korea, Holland and the US. This is where seafood lovers can immerse themselves in Sentosa’s tranquil environment while enjoying a unique taste of the freshest catch. With a new multi-concept — fish market, oyster bar, sashimi counter, bakery and 150-seat restaurant — it sets the bar high to serve up a feast for both the eyes and palate. Customers would find it difficult to choose from the variety of appetising seasonal fish and shellfish, live Maine lobsters, Dungeness crabs, and salmon smoked in-house. At its bar, only one “Happy Hour” price holds throughout the day. To cater to all customers’ needs, the fish market also provides a seasoning service for purchases of fish, while its bakery offers freshly baked European breads.

3. BLUE LOTUS

Keep an eye out, gourmands — one of the best chilli crab dishes in the country hails from Blue Lotus Chinese Eating House. Located at Quayside Isle @ Sentosa Cove, the restaurant serves an innovative and modern interpretation of Chinese cuisine. By incorporating fresh tropical ingredients such as lemongrass and fresh chillies, the signature pomelo chilli crab blends traditional flavours with a contemporary twist — a sprinkling of pomelo flesh offers a refreshing respite from the intense heat. Under the artful direction of acclaimed owner and Creative Director Ricky Ng (formerly Tung Lok’s chief operating officer), Blue Lotus offers an array of distinctive dishes such as the wok-fried Kagoshima wagyu beef tenderloin cubes, as well as mouth-watering desserts such as chilled durian puree shaved ice. Two Blue Lotus concept restaurants will open this year to bring its luscious offerings way closer to city-dwelling foodies.

4. CASSIA AT CAPELLA SINGAPORE

Located near Palawan Island, which hosts the southernmost point of Continental Asia, Cassia at Capella Singapore amazes diners with its elegant 1880s colonial architecture that stands out along  Sentosa’s beachfront. With complete respect for tradition, the restaurant incorporates haute Cantonese techniques into long-established recipes. Pamper yourself with the renowned Chef Lee’s Signature Set Menu by Executive Chinese Chef Lee Hiu Ngai, with highlights that include the delightful double-boiled thick chicken broth with fish maw, and wok-fried Japanese wagyu beef with black pepper sauce. 5. FOC SENTOSA

The sophisticated yet friendly space that is FOC Sentosa — an extension of Spanish restaurant FOC — is inspired by Barcelona’s beach culture. Located at the eastern end of Palawan Beach, the two-storey restaurant and bar feels like a resort that seamlessly transitions between indoor and outdoor spaces, with a second-storey event space that overlooks the Dolphin Lagoon. Celebrated chef Nandu Jubany and award-winning mixologist Dario Knox were the creative forces behind the food and bar programmes respectively, which combine tapas, paellas and grilled meats and seafood, with summery drinks that bear a Spanish flair. A Mediterranean Tapas menu offers the king crab cannelloni of shredded crab meat rolled in sliced zucchini as a signature appetiser. Its myriad paellas include the meaty Iberian pork paella, and a squid ink version that comprises flavourful rice and squid for a chewy texture. 6. ILLIDO AT THE CLIFF

Inspired by Venice’s Lido and Sentosa — two noted isles of leisure — ilLido at the Cliff, a joint collaboration with restaurateur Beppe de Vito, expresses Italian elegance in its food, service and ambience. The menu features dishes such as the Hokkaido scallop crudo with tuna tatare and sweet peas; spaghetti alla chitarra with lobster, cherry tomatoes and tarragon; and pan-roasted seabass with Romanesco and basil sauce. On every first Saturday of the month, the restaurant presents its famed Saturday Prosecco Brunch, which features Italian fare paired with premium Zardetto Prosecco. Decorated in warm tones of turquoise and mahogany that exude grandeur, it also has an al fresco dining terrace with gorgeous views of the South China Sea.

7. GIN KHAO BISTRO

Embracing the popularity of Thai cuisine, Gin Khao — literally translated as “eat rice” — symbolises the Modern Thai restaurant’s desire to distinguish itself while promoting the culture of communal casual dining to ensure every visitor feels right at home. Basing its creations on traditional recipes, the bistro offers an authentic selection from street food to national delights at affordable prices. Its must-try watermelon fried rice — the first and only in Singapore — is a unique delicacy recreated from the drier original Thai version to suit local palates, with its own secret sauce. 8. MYKONOS ON THE BAY

Get into the holiday mood with a visit to Mykonos on the Bay — not the actual Mykonos by the Aegean Sea in Greece, but close enough — in Sentosa Cove. Reflecting the simplicity and beauty of the Aegean landscape, this open-kitchen restaurant is decorated in white and blue using furniture imported from Greece, while an outdoor terrace offers a mesmerising view of the yacht harbour. And the menu complements this immersive experience. Its classic Greek moussaka — an eggplant casserole with braised beef sauce and béchamel — will start your journey right, with the garides saganaki of sizzling prawn in feta and ouzo-flavoured tomato sauce a recommended follow-on. 9. DINING ON CLOUD 9

Share an intimate meal for two in a private cable car cabin that traverses between the Mount Faber and Sentosa cable car stations. With a backdrop of the splendid Singapore’s cityscape set against the night sky, Dining on Cloud 9 allows guests to appreciate a delectable four-course meal, which starts with a chilled king prawn appetiser or a warm shellfish consommé, followed by the chargrilled Angus beef sirloin or an almond-crusted Chilean sea bass. As the entire sky dining experience lasts about 90 minutes, there is plenty of time to sweeten your night with a dessert of cheese mousse with wild berry compote.
