There may have been 60 guests who attended the invitation-only gathering at the Fullerton Bay Hotel, but there was only one belle of the evening: Perrier-Jouët's Belle Epoque champagne. Surrounded by garden-themed decorations — inspired no doubt by the iconic Japanese anemones on each bottle — brand ambassador Thomas Lignier unveiled vintages in rarely seen magnum and jeroboam sizes, which were masterfully paired with tuna and scallop tartares, foie gras-whipped lobster bisque and slow-roasted white veal loin. Many VIP guests also used the evening to take advantage of Lignier's presence to advance their wine knowledge on all things bubbly.
