Summer Cocktail Series: Dr. Paul Chan

We ask top bartender from Dr. Fern’s Gin Parlour for a refreshing recipe to beat the heat.

The drinks in this series are designed to be made at home, so we suggest you grab an extra ice bucket and a highball glass… or two.

Dr. Paul of Dr. Fern’s Gin Parlour has come up with a reinvented bar classic, to curb Hong Kong’s heat – The Detox Gin & Tonic. Sometimes, all we need is a little (alcoholic) cure.

Fever tree elderflower tonic 100ml

Whitley Neill Quince Gin 45ml

Detox water (cucumber, lemon or strawberry) 45ml

  1. Fill a tall glass with ice
  2. Add in all ingredients
  3. Whirl with a drink stirrer

About the drink:

This drink is a paragon, made to withstand the Hong Kong heat, cool and cleanse the body. With a combination of detox water and the light elderflower tonic paired with Whitley Neill Quince Gin – it embodies everything a simple summer cocktail should have.

Dr. Paul Chan tells us, “All our gin & tonic cocktails use fresh botanicals all served for different purposes – whether it is for detoxing, curing any ailments and pains or refreshing the body. This concoction is relatively in line with the theme here at Dr. Fern’s. “

Now, shall we try a glass or two? It is a detox, after all.
